Gingerbread Granola

Prep Time: 10 minutes Cook Time: 40 minutes Total Time: 50 minutes
Servings: 10 servings (about ½ cup size)
Ingredients
• 3 cups rolled oats
• 1 cup chopped nuts (e.g. almonds, walnuts, pecans, hazelnuts, cashews)
• 1 cup other dry ingredients (e.g. dessicated coconut, pumpkin seeds, sunflower seeds,
– you could also add cranberries or other dried fruit )
• 1 Tablespoon ground ginger
• 1 teaspoon cinnamon
• 1 teaspoon allspice
• ½ teaspoon salt
• 1 cup oil/melted butter – I used melted coconut oil
• ¼ cup golden syrup
• ¼ cup brown sugar
• 1 teaspoon vanilla extract
Instructions
1. Pre-heat oven to 150°C/300°F
2. Combine dry ingredients in a large bowl.
3. Combine wet ingredients in a smaller bowl.
4. Add wet ingredients to dry ingredients and combine well.
5. Spread mixture on a lined roasting dish or tray and bake for 35-40 minutes. Check after the first 15 minutes and stir, then check every 10 minutes until starting to go golden brown and crisp.
6. Remove from the oven and allow to cool on the tray before transferring to an airtight container and storing in the pantry for 2 weeks. Serve with your favorite yogurt and summer berries.
Ideas for Gifting
Print both sides of the labels. Cut each label and stick both sides together. I laminated mine to give it a lovely protective finish. Punch a small hole in the top left corner. Add servings of the granola to preserving jars, tie a ribbon of your choice around the lid and thread the Granola Label onto the ribbon.
